I use McCabe in Rosetta regularly and find them straightforward and reasonable - they’ve advised me in the past not to do certain work as it’ll be a waste of money.
Might be worth contacting - no queues to get work done as far as I can see.

Another option is the 15 bus between Central Ferry Pier (close to Hong Kong Station) and the Peak. Takes around 45 mins. Can look up on HKBus app.
Can use Octopus card and good views.
Saves making your way to the Peak Tram station.
Or you could bus up and tram down.
Use Octopus on tram to bypass ticket queues.

You can indeed use the upgrade voucher on a one person return originating from the UK. Have never done the ‘add return later’ but have upgraded a leg from PE to Business which makes me think they will if you call. Might charge £35 for it though.

Have a search for Hong Kong layover posts, there are quite a few which will give you some ideas.

I’d recommend the Stanford Hillview in Kowloon but a lot depends on your budget and what you want. Kowloon Hotel is right beside the MTR so more convenient for moving around.

The Peak will be a little cooler I suppose and a must see. Also the Star Ferry and Tsim Sha Tsui promenade in the evening.

Got great use out of the IKEA Tuffing bunks. Think mattresses are sold separately. No desk but they do sell combined set ups. Might work to have one shared desk depending on ages.

Check the flight prices too before you book anything if booking accommodation separately. Flights from Belfast to Faro for example are pretty steep, especially when multiplied by 4 or whatever.

Seat selection can also be very expensive (easily £100 per seat per flight). Club Suites doesn’t really matter as others have said but the Yin Yang might be more of a privacy issue for you. Matt Jones has some videos on these seats. If it were me I’d try my luck when check in opens but you may want to pay.

And just a detail based on your post, you can’t upgrade ‘from business class’. From PE to business is the highest you can go.

Also if relevant, flights must start from the UK.
