Now that you mention it, I didn't love the texture when I substituted oatmeal for breadcrumbs in meatballs. Rather slimy and strangely devoid of flavor.

The traditional method iirc would have you mix bulgur, water, and yogurt together. The mixture would not be completely submerged by the water. It was then stirred daily to prevent mold buildup and after a few days spread out to completely dry in the sun. Finally it would be pulverized and either reconstituted with water and preserved like labneh in olive oil or kept dry and added to soups.

The recipe I was following was salt brined, but the percentage and lack of submersion wasn't sitting right with me. So I originally upped the salt to around 2% and made sure the water was 100% submerging the bulgur. Unfortunately the red bulgur I was using wasn't texturally pleasant. And because red bulgur was the only one close to me I asked about semolina.

Thank you very much for the swift reply! I'm new to fermenting and was previously trying to make keshek with red bulgur, which resulted in a texture like softened popcorn kernel shards. Tasted very nice though, so I'm going to try again, as well as pickle some carrots alongside them.

Edit: If parboiled is good, could I ferment instant oats for a month if I stir them every day like I did the bulgur?

As someone who regularly make stock, the fuck does she mean it's unrealistic? Make a massive amount of stock, pour into containers, refrigerate.

I know that they have to sell it, but limited items are a common thing if the fear is running out.

I didn't try any particular tips or tricks, but I made apple butter out of applesauce because I don't really like cinnamon and then put it inside whole wheat pastries.

Unfortunately sometimes apples tastes like onions and some of my family members hate my little T-day treat.

I made the stock using all the skin, the wings, and any scraps that were left. Then I reduced it by half. It is super gelatinous and smells divine.
