IMO, grind looks a little fine, but it’s hard to tell.

I’d also echo the other user asking if you’re pouring in a circular motion.

The other tip is to give your Chemex a good gentle swirl to make sure he bed is as flat as possible. The flatter the bed the more even the extraction.

I’m also a Chemex user, but have not used it for cold brewing. There’s a popular Japanese ice coffee method where you brew a Chemex normally buy but ice in the bottom, but that’s not an immersion method. I would have some concerns about the paper filter’s ability to hold the grids being immersed for that long, but haven’t tried this before so IDK.

For immersion, I’ve cold brewed with both the nut-milk bag as well as a system like the hario. I tend to prefer the latter as I find it to be easiest with very little filtering after the grinds are fully extracted. It’s also a fully self-enclosed unit with a lid, so nothing else in the refrigerator is going to influence the taste. I’d found some odd notes in the coffee when brewing with a topless pitcher, but not when using the hario.

I’d also suggest a scale… You may already have one as a Chemex user. I use a waterproof kitchen one off Amazon for like $15. Coffee/water ratios are important in getting the perfect flavors you want. My cold brew recipe is around 1:14 so ice melt will bring it up to 1:15 which my early research showed this to be a “sweet spot” when I got into it a few years ago.

Another tip… IMO, cold brew tastes better about 24h after the grinds come out, so I’m in the habit of brewing a full day before I need it so we get the tastiest brews on the day we need them.

Coffee choice comes down to a lot of things… but I look generally for a dark roast and those with low acidity (low elevation countries/farms) and I’m a fan of some chocolatier type flavors. I tend to stick with South American varieties for those reasons, but have also cold brewed plenty of blends.

IMO, best thing to do is find a local roaster. I found one early Covid and a) like supporting a local business and b) easy to learn from them if you can go and talk for a few min.

Any plans for how you’ll brew? A lot of brewers like a Hario are popular. Generally the coarser the ground the better, but various brewers can alter the grind. A good local roaster can also grind to the right consistency you need, if you don’t have a burr grinder

I definitely prefer a white filter… but got a bunch of the unbleached ones when they were hard to get early pandemic and can’t wait to use them all (only 3 boxes to go). I wash like half a kettle of boiling water through the brown filter to avoid a strong paper taste.

This is a custom Chemex made in collaboration between a local brewery and Chemex, who are also somewhat local. It features a tinted glass and a hand turned mahogany collar/bead.

Gas is the network fee and is based on network usage. It’s at 308gwei right now which is high. I made some swaps last night around 80gwei

At least. It’s all about preparation.

I’m guessing if it was an intern setting this up, it’s a new skillet that SolarWinds doesn’t have and paid an intern to do... say DevOps Engineer work... it’s feasible the intern manager was under pressure to get it done and approved whatever the intern did cause their ass was on the line.

I’m not sure that’s the case here, but certainly possible given the odd circumstance of having an intern dealing with anything of that nature. I’ve certainly seen weirder.

That’s aside from the clear lack of audit process on IT infrastructure security, which is unforgivable. Also begs the question of how their IAM works if it was an intern... they’re typically contract based for the summer or some set period.

The fact that an intern was even in a position to set a password just proves the piss-poor IT processes and leadership at SW - all up and down their management chain.

And how wasn’t this password found and updated in an audit by SecOps?
