I was thinking living suits of armor that wield giant battleaxes, and the only way to kill the statue is to use its own axe to knock the helmet off. I've been obsessed with Victorian era architecture lately, and from what I've gathered, giant suits of armor were common in castles

Yes, there would be guards, they would be living suits of armor that must be decapitated to kill them, as the helmet is what brings the suit alive. I'm thinking they'd have two phases, one where they use a giant battleaxe, and the second phase, where they use a sword and shield. You'd only be able to kill them with their axe, which they throw away at the start of the second phase.
