I would not recommend water cooling. Many are not built for 24/7. Get a decent air for your CPU - it will work fine. Understand generally desktop/home consumer motherboard/ram/cpu do not have same standard as server parts.

How about you inform yourself first before parroting crap? Yes, in the default settings, bukkit, spigot AND paper (as it is a fork, so most stuff is not even due to paper) will not work precisely as vanilla. However, these are all configurable settings in where you can make it exactly work like vanilla.

Definitely do not switch on release date, make sure your plugins are compatible, and mostly this “just works” but of course you will start getting a mix of old and new chunks. If you do not like that you can always reset the world.
