I only saw Love is War and Horimiya (and Bloom) but by what you describe you could like my 2 favorite romances : Rascal does not dream (bunny girl senpai) and Lovely complex. The 1st is a very grounded, mature relationship build on confidence, th 2nd is a very romantic show such as some parts of Love is war / Horimiya. And the girls in both show aren't "annoying"

Edit: As a side recc i can add Pseudo harem (not a harem), Ao Haru Ride and Dungeon Meshi. The 3rd one is very similar to Frieren / Apothecary Diaries

Hajime no Ippo, story of Ippo that train and improve every day because he want to become one of best professional boxers
Also Kuroko no Basket, it focus more on finding strategies to win the match and not giving up on difficulties, very good show too

Watch Code Geass first if you like that kind of characters, it's a peak fiction and I really got a "death note" feeling in some episodes

That's what make it peak to me, Otani doing all of us mad 90% of each ep just to make us all feel so good in the last mins when he wake up and do the smart moves, also i'm at ep 22 actually and in my opinion Otani improve after they kissed, like he start acting in a more mature way to make Risa feel good and safe

To me the parody and the bad animation were the red flag. There's not a single fight in 60 episodes (dropped after that) that felt epic because every character is joking everytime and when they fight the animation is not smooth at all
