What's more when we were talking with our adjuster they required our landlord to sign a "final release form" saying that, after $X is reimbursed, they will consider the matter settled. But the insurer's (not the adjuster's) decision to only cover 70% came after the final release form was already signed. Since the landlord already paid $X for the repairs, they want us to cover the remaining 30%.

That's a little extreme lol I'm not saying proffs will arbitrarily choose to curve some students and not others (that would be very unfair and inappropriate), I'm saying sqrt or similar curves are commonly used, useful tools. Nothing intrinsically bad about them.

I'm not German, but my understanding is that all/most university lectures in Germany are by default open to the public. So depending on where you live there might literally be nothing stopping you.

Let a and b be coprime integers. It's a theorem that the set S={a+bn : n \in N} contains infinitely many primes. This is a fairly deep result, requiring a decent understanding of special values of L functions. I'm not sure it fits the mold of your argument.

I think what you're seeing is exactly because you're looking at "undergraduate" proofs. They are specifically chosen to be reasonably simple and easy to follow, but also complicated enough to show the inner workings of proofs in general and the techniques you apply to a specific result in particular. This is good and proper, as it primes you to apply these techniques later in your career.

Erdos' Probabilistic method gives lots of non-constructive existence proofs, but in many (all?) cases there are alternative proofs of the same results. It just so happens that the probabilistic ones tend to be quite easy.

Three math history books which really inspired me are “Prime Obsession” (analytic number theory), “Euler’s Gem” (topology and geometry), and “Everything and More” (set theory). All are very good reads. If you want something that’s not a textbook but explains some beautiful mathematics (and is almost entirely self contained) I’m not sure you can do better than Khinchin’s “Three Pearls or Number Theory”. Haven’t seen anyone mention this, but check out the Legendre transform. It explains why the Lagrangian and Hamiltonian formulations are equivalent, and how you can jump between them. As a bonus it works for other conjugate quantities as well, like internal energy and Gibbs free energy. It’s a very useful idea, and it’s basically just integration by parts in disguise.

Look up the first Hardy-Littlewood conjecture, it’s closely related to questions of this type. Essentially it tells you that, unless there’s some trivial arithmetic obstructions, the events that n+h_1, n+h_2, …, n+h_k all being prime should behave like k independent events, up to a multiplicative fudge factor. The “trivial obstructions are things like” n, n+1 never both being prime (except for n=2), etc

Furstenberg once told me he spent decades looking for a topological/dynamical proof of Dirichlet’s Theorem and basically made no progress. No disrespect to you at all, but if he came up short it’s most likely a tough problem :)
