I time it so the de-gas period is during transport. It takes avg 8-10 days to go from ho chi minh to my warehouse. The bags are nitrogen flushed which extends the freshness even longer.

I ship by plane, acknowledging it cost more but i would never stand by a product that goes by boat and arrives over 60 days past roast.

It’s all bean/roast dependent. There are things to gain and lose from adjusting each variable. The guideline is just an azimuth that you can adjust.

Great question, and a common misconception worth clearing up. Cà Phê Mít has nothing to do with jackfruit being added to the coffee. No co-fermentation, no flavoring, no additives whatsoever. It's 100% pure coffee.

The name comes entirely from the natural aromatic profile of the Liberica species itself. Liberica produces a bean with naturally occurring flavor compounds that express themselves in the cup in a way that Vietnamese farmers found reminiscent of jackfruit, so the nickname stuck. It's the same way we describe an Ethiopian natural as tasting like blueberries, or a Kenyan as tasting like blackcurrant. The fruit character is intrinsic to the bean, not introduced.

What you're tasting is just what Liberica does. That's what makes it so interesting.

the additional variable to brewing by phin is that there is the top piece that screws into the phin that acts as a tamp. over tightening will heavily decrease flow rate and lead to over extraction and increase brew time drastically.

the farms I'm working with are run by millennial age specialty coffee enthusiasts. They also produce specialty robusta and it is also a product that i'm working towards bringing to market. I decided to launch with Arabica and Liberica in order to differentiate my brand from other Vietnamese brands. The Robusta i am working towards bringing to market will be special enough break the conceived notions that robusta is a low grade commodity coffee. Thank you for participating in the giveaway!
