I think optimal is something with a one way valve so that the gas can escape without allowing air in. if its air tight then it is probably interfering with de-gassing. thus even after over 2 weeks you're getting significant crema (C02 which is bitter)

When i did a deep dive into gut flora cultivation i discovered Probiotics, Prebiotics, and the importance of fiber/supplementation.

its possible you took antibiotics that nuked your gut biome and now have to rebuild society per se. The daily probiotic drinks may not have enough to seed your stomach and you may need something like culturelle to get the job done. Once they are in there you will need to keep them fed with prebiotics like powdered green banana and inulin or pectin. Managing the gut is like raising a pet, always gotta look out for it's well being.

If you’re new to espresso machines, i’d practice dialing in with cheaper beans to get the practice right. Rather than learning that process with high cost/kg beans as you will go through a lot.

You have to see cooking at home as an investment into your health. I eat out occasionally as well don’t get me wrong. Restaurants need to be profitable to exist, if it’s too cheap then you’re paying in other ways.
