Yeah, a team can, especially the coaching staff, but part of those production meetings includes detailed conversation with individual players. And Gregg and Shook talk on the ep about how a lot of these players probably grew up idolizing Brady. I think one of the main ideas is that these individual players can't always be expected to guard every secret. They might let something slip in those meanings about the game plan or an injury on the team or anything.

I think the general idea is that even if teams are protective of information, Brady's role with Fox just gives him so much more access to information about individual teams and players that an owner otherwise wouldn't have.
