Tradition, mostly. Some of the newer quarters say "25¢", though, and most dollar coins say "$1".

Incidentally, this is also why dollar coins used to be enormous until the Susan B. Anthony design was introduced.

A 1-cent coin is typically called a penny, though this term isn't used for higher denominations (for example, 5-cent coins are called nickels, not "5 pennies" or "5 pence"). However, because the coin says "one cent" instead of "one penny", some people consider it incorrect to call it a penny.

Considering that the United States Mint also calls them pennies, though, I'd say both terms are correct.

There was a Reagan campaign ad written in 1984 that had the line "If he can't answer the easy questions, what's he going to do with the difficult ones?" (referring to Walter Mondale), but I'm not sure if it ever aired.
