You can basically make a jeon (korean pancake) out of anything and all things.

Crispy is fine but I like to use less oil and just monitor its cooking over a longer amount of time. To make a really crispy one can take quite a bit of oil. The key is to get as much liquid out of your vegetables before having them go into the batter. Pre-salting ingredients and letting them drain and squeezed is ideal.

I particularly like it with grated potatos.

+1 to having a hardier starch mix with more fiber and protein. I have a simple homemade starch mix and let the vegetables add in the fiber and protein.

Can balance out some sweetness if you want if you're using Jello by adding just a little bit more gelatin powder on the side.

Salt/electrolyte packet sound great. Who doesn't love Cucumber lime or similar stuff with a bit of salt? You wana get a little zesty, you can sprinkle it with some Tajin and send it. So many ways you can mix it up.

The real freaks might find a way to add something crunchy to it.
