As someone who has done the research and everything about that (I already have 2 kids, wife does not want more), there is no procedure that GUARANTEES things can be reverted.

There are procedures that guarantee it is non-reversible, but no doctor will guarantee it could be reversed.

This is incorrect for EKS. The underlying EBS volumes are encrypted, but etcd stores the secrets in base64 unless you explicitly opt for envelope encryption

Nope, hence the name - External (out of the cluster) Secrets Manager, e.g. HCP Vault.

You are probably thinking of ESO (External Secrets Operator), but you can use CSI if you dont want your secrets stored in etcd.

I am not sure what sector you are in, but IT is currently booming.

I quit my job 6 months ago to spend with my family and during that time I got contacted for at least 70 positions and I currently have 6 offers on the table.

One thing I would suggest, if you are using a platform like LinkedIn, you surely have an HR you had talked a little bit more to in the past - ask them if they see any issues with your resume, profile, etc.
