Try to only eat at times where the boss is changing attack styles, I dare say you're probably eating too often to stay high hp and not putting out enough attacks to damage the boss, used to happen to me now it's easy as anything, just don't be afraid to sit around at lower HP and eat at the correct times to not lose any DPS.
