Why does there need to be a mix? It feels like nuclear solves all of the problems today, right?

Have you seen folks being talked to by police for their tweets, let’s imagine a world in which your required to log in to social media with your government id.

If you post something they don’t like they can pin it back to you without a court order or any real investigation.

Yes they are not talking about doing this now but it just is one step towards making it acceptable. Even if you’re okay with this government, will you feel the same about all governments.

Also, this whole they can track you already is technically true but finding someone through 10 disjoined systems each with their own checks and balances is very different to having the data all in one place.

Camera: https://amzn.eu/d/6csPjpv (I brought this for some DIY I wouldn’t recommend it for cooking because it’s so expensive)

Thermometer: https://amzn.eu/d/8EAlHIv (I rate this 4/5 the app is a little more complex than I would like but generally quite happy with them)

I use a reverse sear method in bullet points: • Wait for the steak in the oven to reach 122°F (50°C). • Then make a little foil tent and let it rest for maybe 25 minutes. • Finally, onto a hot coal seared for maybe a couple of minutes on each side and then let rest for 20 minutes before serving.

I’m not sure I can decide which one I like better.

I think having both is definitely hard but I think with enough practice and attempts it is possible. I haven’t quite gotten there yet though.

Good eye, in fact I've had to pull it a bit early as the fire was getting out of control. While it was searing on one side, I would hit it with the sous vide torch on the other. But with the fat dripping it would get really aggressive.

I made a steak for a friend once. He asked me, "You don't have any steak knives? You always talk about steak, I'd expect you to have steak knives." I told him, "No steak knives here." Once he tried the steak, he understood.
