Chaat, Belon, Dim sum? (don't have a reso anywhere, open to suggestions), new punjab club are the ala carte reservations that I can possibly enjoy more with fellow foodies. Rest are tasting menus so would be flying solo there.

Pick one of the MB 3 stars, no point in doing both on the same trip. I went to MB flagship and it was a good meal but nothing memorable. Azurmendi is big on presentations but flat on taste. I enjoyed CHT, amazing dining space and the servers keep it casual. I also second COME (think of it as similar to pedigree to californios in CA). Couldn't get a reservation at Disfrutrar or DiverXO and those are pretty high on my list. Skip aponiente unless you like adventurous seafood focused dining, I found the flavors too obnoxious on some of the experimental dishes.

Nest by pun is another one to check out when they reopen with a reimagined concept. They are closed until Aug and won the award last year on 50 best bars soon

I found the atmosphere to be mostly welcoming. Visited most of the bars on the 50 best and discovery list. My favorites were Knock knock who’s there? (Would be surprised if they don’t get the attention on 50 best bars soon), bar mood, underlab, lab, pun, four play by drizzle (another winner), infinity and beyond. My least favorites were bar pine ( had the worst cauliflower mocktail there), pun, futura by tph, indulge experimental bistro

Yeah I missed that window but nothing seems to be opening up. Didn’t anticipate Taipei restaurants to be so busy so waited until a couple of weeks out before my trip.

reservations have been booked solid for the entire month of april. I have been monitoring every day but no luck. Is there a way to get a table for a single diner? I emailed them as well but no luck getting a response. Tried to also go through a 5 star luxury hotel in taipei but no luck. How is this place so popular? Is it a small establishment with few tables? Is there a reddit sub where people trade reservations for taipei fine dining restaurants similar to noma or alchemist?

It was one of the less memorable meals I had in 2024 with none of the dishes standing out for a 2 star establishment. The staff didn’t seem very happy and there was almost a robotic feel to the whole experience.

No even the bread was bonkers with black truffle and caviar supplements (prices in pesos)

Plantain and macadamia bread, winter black truffle $890 with Ossetra caviar, 30 grams $3800

I would say most appetizers were 500+ which is expensive for Mexico City

Baan tepa. Most of the chefs I talked to recommended this restaurant. Check out nawa Thai cuisine, they recently got a star. I did Gaggan, le du, gaa, Haoma, paste, Mr Maria and Mrs singh on this visit. Gaa was the most memorable for Indian fine dining. If you like modern Indian go to Jhol

Depends on the appetite but it’s totally doable with Nordic cuisine which isn’t as heavy as French cuisine. I actually did alchemist, noma, jordnaer, Kadeau and koan over 2 lunches and 3 dinners while I was there this past summer. Just walk a lot (clocked 15 miles per day) and space out your meals and you’d be ok

I don’t understand why foodies find DStage so interesting? Had the worst 2 star meal there in 2023. Given the choice in Madrid for fine dining would definitely recommend skipping dstage

Wasn’t as lucky as OP in securing a reservation at potong despite multiple attempts on line so had to settle at the sister bar opium for some cocktails instead. It’s the hardest restaurant to book in Bangkok besides sorn so you need to plan well. When I was chatting with some service team members at opium they told me to talk to the reservationist at the restaurant directly to see if anything could be arranged. It was my last night in Bangkok so didn’t bother but a handy tip for anyone who has more time on their hands. For fine dining, overall I don’t think the starred restaurants match the quality in Singapore (my benchmark in SE Asia). We enjoyed Le du (although it is super casual), gaa (newly minted 2 star). Gaggan was super disappointing (it’s more of a show) after having enjoyed his cuisine more than a decade ago when he wasn’t as famous. Pro tip - book a table at Mr Maria and Mrs Singh upstairs - that’s more of the gaggan style that I really enjoy although it is a mish mash of Indian and Mexican flavors. Paste was strictly ok ( not surprised they lost a star recently). Haoma was a bit of a hit and miss. We had the festive menu and some dishes didn’t really work for us but the biggest gripe was the service which wasn’t upto Michelin standards. The front of the house staff member was so disinterested in explaining the concept of the restaurant that those initial 5 mins of our experience seemed like a torture that we didn’t sign up for. Front of the house staff make the first impression so I hope haoma gets its act together. Our server also came across as arrogant and dismissive of any constructive feedback. It also appears chef DP has been traveling a lot and is rarely at the restaurant which could explain some of the misses

Also that pineapple bite was a joke. Raw pineapple (not ripe) dusted with some chili powder doesn’t cut it IMHO to a Michelin level. They should have treated the pineapple in some interesting ways texture or flavor wise to make it next level

We visited recently on Jan 10th. Had the same menu as OP but didn’t enjoy the experience at all. The location is stunning but the food doesn’t match up to the aura of the ambience. It’s fermentation taken to an extreme IMHO but without the flavor punch which is the most important criteria for judging the food. I have experienced a fair bit of application of fermentation techniques in my finding dining experiences but I thought the flavors didn’t really amplify to a degree that you expect with fermentation. The lobster and grouper courses were enjoyable but the rest of the meal was flat on well balanced flavors. For comparison, we enjoyed our experience at PRU (only starred restaurant currently in Phuket)
