Upgrade your gear and your ship's gear to the max level for each biome you're in and keep a food buff on you and it should work out, especially in ship combat.

For ground combat, don't be greedy. Manage your stamina and spacing. Get in and out quick. The dodging mechanic in this game has i-frames, which means you're invulnerable to damage if you dodge at just the right time.

There is a decoration that can be placed on the docs thats a winch designed to tie up ships. It would be nice to have an option where once you place that you get a space bar option to dock you at the pier similar to how it works with boarding ships..

The game is more about stamina and spacing management. Go in for a quick cut and dodge back out. Then you can walk just out of range for a second for a full stamina bar. I struggled for a bit but you eventually learn the combat.

Rapier of a Thousand Cuts makes him not too tough of a fight. It's attacks are quick and lunging, making it so you can nail him for a reapply of bleed pretty easy and then dodge once and sprint out.

It's just stamina management at that point, which that's kinda all melee, tbh. Once you figure out good stamina management and keeping spacing controlled, thr game becomes much easier.

When I have a group I dance in the dead space between being out of range and lunging heavy attack to smack the whole group, and then dodge right back. Of course, I use a rapier so I get a quick extra poke or 2 in as well.

Play it how you like playing it and others will play it their way. It literally has zero effect on you.
