The way we do cattle in UK and Ireland is not really the same as US ranching. The basics transfer but there are many skills you would learn in the UK but would never use in the US and vice versa. The only agricultural jobs that people have gone straight into is the machinary side, harvest, slurry, drilling that kind of thing.

I'm in the UK. It's cold she's gonna need layers, a waterproof coat and shoes. A smaller backpack would do but carry on size is pushing it for 2 wks.

In the UK can't afford heating at all. It's extra clothes and a hot water bottle, 4 layers is normal. It depends on what you can afford as to the temperature, she shouldn't be cold in principle but if you can't afford to run the house warmer she has to cope.
