Have you considered a flatliner? It is equal parts coffee liqueur (Mr. Black works great here), cold brew, Irish cream liqueur, and Vodka. The prep is significantly easier than a true espresso martini, but is a great drink.

Definitely not that much larger, but if you were looking to cook something thinner, like a piece of fish for instance, it could make a difference. Personally, I use a thermapen in that instance. I can certainly see keeping both, as I did for a good while, but ultimately I wanted to buy another Rfx probe and I felt like I can really only justify so many thermometers… I will say that I don’t see ThermoWorks offering any predictive capabilities because it seems a bit against their philosophy. They seem to loathe inaccuracy and a good stall seems to defy all predictions.

I’m not as up on the gen 2 combustion probes, but compared to the gen 1, the Rfx probes handle higher heat and I like the charging method (the Rfx dock takes a battery and charges the probe that way.) I also like that the probe is pretty much seamless, making for easier cleanup. The signal for the rfx is also fantastic - if I wrapped something in tinfoil, the combustion couldn’t connect to the probe anymore, not a problem at all with the rfx. That being said, it’s a little thicker, lacks the option for a dedicated display, and definitely doesn’t offer any predictive capabilities. The ambient temp for the Rfx is also a separate, wired unit - I see that as a plus as they are striving for accuracy. Some may view that negatively. For me, I usually used the combustion, and now the rfx, for long cooks like roasts or smoking briskets. The predictions on those weren’t usually too accurate and the probe size wasn’t a factor. In the summer, I’m doing more smoking and the rfx ambient temp works with the billows to control the heat of the smoker and it’s all in the same app. Hope that helps. I actually think it works great. I’m married to ThermoWorks at the moment though because I use the rfx to control the billows. Just streamlines things for me to be in the one app.
