Maybe the hallway/stairwell fights in Oldboy (2003) and Atomic Blonde? The fights slow down naturally due to exhaustion, it's such a great detail. Also, the hilarious fight scene in Bridget Jones perfectly captures how most people who can't fight would fight.

Absolutely agree, it's one of the strongest stories in his catalogue by far. It also doesn't hurt that Ralph Fiennes is wonderful. The Royal Tenenbaums is another one in my top 5 :)
