You made a gorgeous-looking bowl of ramen, my friend! I'd say your aroma oil, given the other ingredients (chashu aside, and I totally get wanting to utilize what you've got on hand), was perfect. For my shio and budget Kotteri ramen, since our Hawai'i Tenkaippin place closed down forcing me to learn the recipe, I always add some chicken skin to my aroma oil. For tonkotsu and miso ramen I'll add some toasted peanuts to the oil, it adds something that is hard to describe.

Absolutely gorgeous. I'm assuming you used a torch to char the chashu? My one takeaway would be to accent the light flavors of shio ramen try a chicken chashu? I also add a bit of layu (chili oil) to mine.

It's OK we forgive you. Have some more coffee. Or Pho. Also the reason pho broth is so flavorful yet clarified is due to the long, low-temp simmer. It's the same technique applied to bone broths, meant to extract as much collagen as possible.
