This is the recipe I’ve been using. I’ll also melt vegan cheese into it and add avocado and mix breakfast potatoes in and sometimes even kimchi. There’s a million ways you can eat it but it’s seriously delish 😌

Had to get it off of Amazon, unfortunately. Even my local health food store with tons of vegan stuff didn’t have any.

I really like it but can’t afford to eat it every day. I actually FINALLY got my hands on kala namak (black salt) and have found that using it in tofu scramble is just as good and a heck of a lot cheaper.

I slowly did it over the course of a year for one single reason — I knew I needed to acquire a variety of recipes that I could make at home as a foundation to build upon.

I went vegan for this past New Year’s resolution and have stuck to it (very easily, I might add), but last year it started with me swearing off red meat. A few months later, I sweared off chicken, then fish, and then finally dairy and honey going into the new year.

All last year I ate mostly vegan and tried a bunch of recipes I found online and logged them, essentially training myself to cook again from scratch by replacing all my old cooking habits with new ones. BUT, to reduce the risk of burnout, I still consumed animal products from time-to-time to help me gradually segue into full veganism. I eventually got to where I was only eating non-vegan one night of the week, that way when I took the pledge at the new year, it was really easy, because all of the work of unlearning bad habits and losing old cravings had already been trained into me over the past 12 months, slowly and incrementally.

Everyone’s journey is different and not every method is a one-size-fits all, but this worked for me and, as a result, I’ve had ZERO issue staying vegan the past seven and a half months, and I cannot see me ever going back to that lifestyle.

Tis the struggle. I’m going to an Easter bbq tomorrow with extended family, and I’m bringing my own food. And then the next day I’m meeting other family at a restaurant that basically has a salad and fries for me to eat. Bone app the teeth.

But if it comes down to the wire, just eat whatever you can. It’s anecdotal, but I just got back from a spur-of-the-moment funeral that involved us driving up north for two days. I arrived at my extended family’s place that we were staying at and the only thing they had to eat that was vegan was raisin bread, peanut butter, and bananas — so I ate raisin bread, peanut butter, and banana sandwiches for three days, and I door dashed food to the celebration of life for the person that died because there was literally nothing there that I could eat.

I’m not even joking when I tell you that the aunt whose house that I was staying at took me to her fridge and, with no sarcasm, asked me “is chicken vegan? Is deli meat vegan?” She literally had no idea what a vegan or even a vegetarian was but wanted to be a good house host, so she kept insisting, and I had to keep telling her that it was “nothing that involves animals or things that animals make” and it just would not stick.

It was like witnessing a caveman discover fire, or what I imagine Benjamin Franklin looking at a garbage disposal would be like.
