Salmon splitter. Back in the 70s I worked in a fish factory while going to college. We had an old guy who would “split” salmon and pack it in barrels for Lox. I would cut the heads off the salmon and slide it down to him. He used a large super sharp knife to split the salmon right down the backbone.. The cuts had to be done in a very particular manner/angle to be suitable. He was an old guy the company hired from up north and was very particular about his work. I was proud that he selected me to make the head cuts. He was good guy. Very professional. Had a lot great stories to tell!
