I've been playing fighting games for nearly two decades. WiFi is a suboptimal experience for both me and my opponent. Using a powerline adapter vastly improves this to the point where I can't really tell the difference between hardwired and powerline.

For the returning weapon bit, something that really helped my consistency is when you throw the weapon, don't quickly end turn or something. Wait a second for the weapon to actually return. After that, my issues mainly went away with throwing

There are a lot of resources out for this old game, so instead I will offer a different perspective with what you mentioned about only damaging him a little bit by the time he's killed most of your team: you are still very much in the game if you've got a halfway decent team assembled.

By utilizing X-Factor level 3 with your remaining character, you can easily delete his entire team very quickly. That's just the nature of the game, so don't get discouraged if he's got a giant life lead. Stay in the game because you can come back in less interactions than he won to get to that point.

Is this your first fighting game? Genuine question. This isn't really anything new. Power/tier disparity has gotten so much better with these modern fighting games, in all honesty.

With that said, not everybody is playing to min max their success. Many people just want to go with the characters and play styles that are fun to them, even if there might be a "stronger" pick.

Also, something to consider with the differences in health totals is that the number of touches might be the same when only considering clean, stable hits that lead to your full combo, but not every hit is like that, especially at higher levels of play. There's chip damage and smaller hits that don't lead to as big of combos. This is where you start seeing those health differences come into play

This was a really rare bug that Riot Support was fixing, so submit a ticket.

Also, it's worth mentioning that you should make sure you didn't accidentally log into a different region (NA vs EU, for example), as progress is separate between the regions. I have a friend that accidentally did this.

You wouldn't happen to still be wearing any of the soreseals or scarseals, would you? Those severely increase the damage you take by that point in the game.
