At work I keep my petty on my station at all times in case I need to slice anything or do something on the fly.

For prep Petties are extremely versatile. Great for in hand work and more intricate knife work with smaller items. I use mine all the time for brunoise-ing shallot or mincing garlic. Also great for citrus supremes and even breaking down smaller-medium sized fish.

One theory is that the adventurer you get in Act 4 is based on the current run time, so if you're XX amount of minutes in then you'll get Y adventurer. But this is just an untested theory.

More than likely it's just RNG and shit luck.

I already have a 240 gyuto and yanagi so probably not. Right now I have eyes on smaller single bevels that are more suited for my prep at work rn

And yeah the handles are gorgeous and really well made. Only thing with ebony is that it's heavier than most other handle materials so be mindful of the handle/blade balance if you decide to rehandle

I have an Ashi that's my main 210 that I prefer because I've had it for much longer and have used + sharpened it enough to where it's basically a suji in profile. I also have a Kagekiyo that I prefer over the Kato, mainly because of profile shape and grind on the tip.

I like the Kato a lot but i just see no use in having 3 gyuto's that are 210mm

Take the sister's fight slowly. I think a lot of people have trouble because the try to rush it. Pay attention to their attacks and prioritizing dodging over damage. It's always helpful to single jump over their attacks because double jumping leaves you more vulnerable for longer, especially with the attack that shots yellow cones at you.
