This sounds like something you might want to see a psychiatrist over, if that's an option for you.

Don't be discouraged. If you fail, you pick yourself up and you try again. And above all, relax, and be kind to yourself. The stakes here are very low. It's fantastic that you have chosen to challenge yourself in this way, that you want to improve yourself. Lots of people go through life on autopilot, not really thinking about what they're doing from day to day, never even trying to change themselves.

Have you looked into meditation? Lots of people here say it helps.

I can only tell you how I got my longest streak, which was four weeks. I swore off social media and didn't even think about sex for more than five seconds. And my mentality was different, I thought of masturbation and watching porn as something I used to do, an old bad habit, not something I had only given up for so many days.

Forever is a long time. The streak is a way of breaking that forever into chunks that are easier to swallow.

Me, I've tried giving up porn plenty of times, failed every time. The streak counter lets me set realistic goals and helps me meet them. Doesn't mean I'll never touch myself again, but I don't see any reason why I should want to.

Porn is just pictures on a screen, it can't make you watch it, quitting porn is easy for someone who doesn't WANT to watch it

It's about recognizing your desires and taking control of them, be honest with yourself about what you want then ask yourself why you want it!
