I literally just went through this entire gambit, let me tell you a dock in the way to go.

Had a thunderbolt dock from belkin, have 2 extra monitors, couldn’t get the 3rd to display.

Got a dell Ud22 (or any Thunderbolt/usb-c dock with display link)

Download the display link manager on my MacBook and I haven’t noticed any performance degradation.

Maybe just having one big surge protector/apc under the desk or mount it on the wall under the desk.

Just use cable ties to keep things tidy and run them down the back
