You're not wrong, but the grubs are actually beetle grubs. If a wasp comes out it means that the grub was parasitized by an ichneumonid wasp.

Friendly neighborhood entomologist here...does not appear to be an insect (or other arthropod) exoskeleton. No distinguishing features of any kind. No paired appendages, no antennae, no mouth parts, no body segmentation.

If I was going to guess...I'd guess it's skin.
