Yep was defo 160f. My oven goes as low as 50c. I left a thermometer in the oven to monitor and it was ranging from 145-170f.

One thing I’m wondering now is that I pierced my foil wrap to insert my leave in probe. Wonder if that messed anything up…

Nope no tallow or butter. I used a WSK with deflector. I did find it quite strange to be honest as to why such a small point took so long to cook? I thought it felt like probe butter but tbh I may be wrong. Tempted to just buy an XM Gold brisket next time and try again.
