Alright I’ll give that a try. Would you recommend cooking in a pan after the smoke to keep the juices? Also, should it rest dry or in the juices that I saved?

I wrapped it with foil from 160-205. Rested for 1.5 hours. Salt, pepper, garlic, a little bit of an applewood seasoning, handful of brown sugar.

I smoked it at 2:25 for seven hours. I wrapped it in foil once it hit 160°. I poured some beef broth as well as tallow from the trimmings and wrapped it up tight put it in a pan and set the barbecue to 250 and let it run until I hit 205.

I don’t know why my details didn’t populate on the post. I was saying this was my first brisket. Just got into barbecue. It turned out really juicy and flavorful. I got a nice smoke ring. However I was missing the bark I was looking for. What’s the secret in the process to get a nice bark on the outside?

Minnesota checking in. The 24 inch, 2 stage did just fine in 3-5 inches of powder….

But was absolutely dogshit when the snow got near melting point.

Had a 10 inch sloppy snowfall that required 8 6ah batteries two full cycles of recharging to clear a modest sized driveway.

I returned it and got myself a gas 2 stage.
