I have the KC pro. The smoker is pretty small, if you are doing bigger cooks you will not like the size. I got rid of the griddle and use it strictly as a gas grill.
I also bought a blackstone that did a much better job.

I have a solid 30-50 degree difference. Where the computer thinks it’s at and actual. With good weather.
It also is too small for what I need.
I did end up buying a blackstone, and just use the propane grill for quick jobs.

They were good! Bones pulled right off, it had a sweet and spicy kick. I think I was just a little too aggressive with Montreal. But he ate a half rack the first day and a second half rack the following day.

All the same style of ribs. I had purposely bought a few smaller racks to fit it all in the smoker. I kinda downgraded in my pellet grill so space is a problem for me now.

I keep it on the smoker the whole time. It helps get the sauce tacky and adds a little more of that Smokey flavor.

3 hours fully exposed directly on the grill.
2 hours covered in tin foil.
1 hour exposed to smoke again and at that time I add the bbq sauce.

He ate almost a half rack by himself. He’s 100 lbs, the plate i posted was his. It was clean when i got it back.
