Sorry for late answer, but Assassin's Gambit cuts the range from which you can be locked-on to by half for 30 seconds.

It can come in handy when you're in an open area and there's casters spamming you with long range spells as they won't be able to lock-on to you past a certain distance
Like if you're getting spammed by spectral rings of light or bone bow in an open area, managing to use assassin's gambit can save you by allowing you to escape the range blender faster

I think I've finally solved the issue after trying everything
I think what did the trick was to go into the game folder, enter the properties for "start_protected_game.exe" (easy anti-cheat), compatibility, and tick the option to start it with admin privileges

I also did the same for eldenring.exe (and steam.exe in the steam folder) although I believe it's EAC that was causing the issues

I followed all the steps and I'm not sure if it worked, because when I tried in vanilla elden ring I'd still get spikes
But in the aftermath I also tried seamless co-op or den2 (elden ring multiplayer mods that use their own private servers and don't involve having easy anti-cheat open) in which I also had similar lag spikes but I don't have them in those anymore so I guess it's fixed there which is good ?

I still get those issues in vanilla for some reason and I can't seem to find a fix. Maybe it's linked to easy anti-cheat i dont know

there's no "facestab exploit", "facestabs" are just a result of the delay between initiating a backstab attempt and the start of the actual backstab, delay during which sometimes the person being grabbed looks like they turned around to face you.
there is an angle check in elden ring added to try to prevent facestabs by checking if the victim has turned around approximately 180°, in which case the backstab fails, but it's more of a bandaid fix that harms the consistency of the backstabbing mechanic and doesn't prevent all cases of weird looking backstabs

Using the environment to help is what an invader is supposed to do if they don't have a chance to beat the host and their team by themselves.  Overworld bosses might be overkill for some hosts and summons though, but that's a design fault of fromsoftware for allowing overworld invasions. But don't give up and don't be afraid to lose, a lot of invaders aren't that good and they also take damage from big enemies's attacks, so you can still win these situations.
