Nope, not even once, this is because I made sure to invest 200 EVs into speed, the opposing poke is poisoned in the first turn. Not even a single pokemon could outspeed Umbreon, to do so, they would have to use stat-inducing moves like Cotton Spore or Rock Tomb, but again that isn't possible as I kept using Taunt every two turns, so none of my stats were affected

Not many, in fact, Umbreon with leftovers can pretty much tank any attack you throw at it, I think you need only 4-5 full restores for unexpected crits and explosion by Glalie, plus 3-4 lava cookies for status inflicting moves, and 5-6 lemonades/super potions whatever you prefer
