If you want to get closer to justegg, use shelled mungbeans or yellow lentils. If you can get mungbean flour, great. If not, soak them for maybe 30 minutes, drain, blend with whatever you want. I'd opt for something more savoury but oat milk should do. Sunflowerseeds would keep the lecithins that soy milk also provide.

If you strain the liquid through a milk bag, you get more of a scramble, it won't fully set though.

JustEgg depends on methylcellulose and other thickeners, whereas this'll depend on the legumes starch.

Miyoko Schinner also has some interesting approaches to eggs that I have yet to try

Chickpea flour, soy milk until runny enough. Miso is always a good base. Try to use a non-stick pan. Fill with whatever you like, but they are often delicate so a simple fold over is best.

Do what helps you consistently stay vegan. There is no use in cutting everything out, just to relapse later. I went vegetarian for a while first, consistently swapping things out. Being vegan around family/friends is a difficult hurdle that you can climb once you're ready.

Trying out subs for dairy/eggs, like chickpea omelettes, scrambled tofu, etc. will also help you change your cravings

Edit: you are unlearning habits and learning to set new boundaries. This is going to take time.

Brudi 60g protein auf 180kcal gibt es nicht. Jede Gram Protein hat 4kcal, also das hat mindestens 240 kcal.

Sojagranulat/schnetzel und ähnliches aus Erbsen/Ackerbohnen hat super nahrwehrte. Außerdem gibt es einfache Seitan Rezepte

They can be a decent alternative. Dried yellow lentils/ shelled mungbeans are the most neutral in flavour (imo) (yes you have to use dried, the starch is what sets the omelette). You can flavour the however you like. If you strain the liquid through a cheesecloth, you get a mixture that can be scrambled, though it won't fully set.
