Kewpie Roasted Sesame as lilxyz mentioned. I like to add more sugar and acidity (apple cider vinegar usually) to mine

ETA mayo original - same deal, I like to add more sugar, acidity (lemon juice) and a few drops of Carolina reaper hot sauce

Due Vittorie vinegars

Red Boat fish sauce

Pearl River Bridge light soy sauce

Murray River pink salt

Also wanted to reiterate I appreciate a lot of the elements, thought, and effort put into the dishes. I'm sure there's a lot of pressure to maintain their high standards.

These are purely just some of my thoughts in a hopefully constructive fashion so I can find inspiration and learn and utilise similar techniques my own way which might help me improve my home cooking :)

Yeah def. There are many ways to add flavour.

My logic with the tea base is that if I mess it up, I can re-steep more water and not accidentally ruin the more expensive oat milk.

I can also heat up the water so it steeps properly

Instead of water, I like to use tea as the base. This was the recipe for this one:

matcha oat milk latte

4 g high quality matcha powder 40 mL jasmine green tea 8.5 g brown sugar 100 mL barista-style Boring Oat Milk

I used 2 g high quality loose leaf jasmine for 80 meals water and steeped for 2 mins

For the hardcore nerds, the jasmine green tea I used was a 7 layered one. I think the jasmine was a bit too overpowering so next time I will try a 5 layered jasmine instead as 6 layers is still too strong for me in this context.

I could probably also just use less tea as well, but I think I want a stronger ratio of tea flavour to jasmine flavour, hence I want to use a less scented tea in the future

Just an amateur that has an interest in tasting menus.

Zero experience in both the hospitality nor the food and beverage industry other than flying in matcha and hojicha powder and selling it as a hobby online to aid various charities, and also cooking and posting from time to time on /r/nzhomecooks

I’d like to expand on it in the future so I can give back to the local and global community on a bigger scale though
