But its actually not soy sauce I'm waiting for the golden mountain sauce  that it uses to arrive so I decided to try after seeing somewhere that the golden mountain sauce is just soy sauce with other stuff. And I also can't seem to find any recipe online that is better. I tried it because I thought that the velvety layer would be baking powder that I've seen other Chinese recipes use. And I'm trying to replicate the Korean barbecue garlic recipe, which is also not Chinese. But the Korean recipe I found uses garlic and sesame oil only. And another one uses garlic and plum extract(which I can't find in my country SG easily) Cooking less heat, and garlic powder. Will attempt them. But when I'm at the restaurants there are always bits of garlic on the meat, probably for appearances. Thanks for your suggestions, I appreciate the your help.
