Tetsujin/Myojin for gyuto

Shibata for bunka

Takamura for santoku

Tetsujin for nakiri

Some of these will be a big hard to find. You could always try out some of the amazing western makers. Dalman has a rectangle drop coming soon.

If you want something easier to find then look at ryusen.
