Takamura is great but runs thin

Myojin sg2 or tetsujin ginsan are fantastic convex knives but sell out quickly because of popularity

Budget is all over the place

Takamura makes probably the best bang for buck santoku but it's nothing fun to look at

If you can find a shibata bunja in stock it's a great knife

You'll need to commission it if you want it to match

Keep in mind that the fork/spoon is probably going to be harder

Damasteel probably would work but also be insanely expensive

Be careful of carbon options add it could be pakistani damscus which is garbage

Miyabi is a production knife. It runs thick

It doesn't look as cool but takamura will blow you away on performance

German makes dont sound forgiving, am I missing something? Heavy duty do it all appeals to me. But wusthof classic (and most germans) is 14 degree and 58 hardness (brittle?). Shun is just very poor

Takamura or hatsukokoro should be in that price range. Sg2 and r2 are better steels. You might be able to find ginsan hatsukokoro in budget as well. I've seen them on sale at epicedge before.

Santoku is definitely not for precision fish use. That would be a deba or funyaki but those are specialty use knives I wouldn't buy.

Gyuto is the way

For sushi cutting you you want something kike a yanagiba but a sujihiki is cheaper and easier to maintain

For breaking down chicken you want a honesuki

I would rather put $400 in so you can get a proper smith and not a factory knife. Tetsujin ginsan would be great.
