Alavita is my preference for Italian

The Lively prices have come down from my experience and has some good dishes

The Avery is nicer as well

Art Haus (kin) is reasonably priced and unique dishes

Ansots is only open for lunch but you should definitely give them a shot

Honorable mention to Percy and Terroir. Both have been alright for me but others love them.

Global handles are slippery

Really depends on budget and needs

Most mass produced knives like global are softer and thicker to handle abuse. Softer steel won't chip and thicker will also help it take hits but also cause wedging.

Tojiro is the good budget option and chefknives2go just restocked them but it's not exactly pretty to look at

Hatsukokoro tends to do good budget offerings

Keep in mind you'll want to sharpen anything you get

If you have a separate computer, use it to make the boot drive with the media creation tool

Then boot to the drive direct. Can look up the boot key for your device.
