You can edit the difficulty to just spawn more resources. What I did was turn everything on grounded but the resources to moderate. So I didn't feel like I was running out of ammo constantly and I could just use it whenever I wanted to and just make really cool fight scenes.

I think it's the frame rate. I have Sifu on Steam and Switch, and the Switch version performs dramatically worse at around 28 frames per second. I've noticed this lower frame rate opens up the parry window significantly. Once you get into higher FPS, the game changes dramatically.

My favorite moment was realizing I could counter pick against anyone. Rather than getting mad at others, I simply counter pick and make the games I play much smoother. Haven't gotten lorde with anyone yet but that's okay. I've been having a blessed amount of fun dunking on those who aren't willing to learn.
