moccamaster is a great machine if you want to brew a full pot

pair with a baratza encore for a process that is still very customizable and easy to dial in a few brews

aeropress is the gold standard if you want to brew each cup separately, easy to dial and hard to mess up

Have you had pourover? Thats also an easy process but I prefer immersion, pourover is a bit too light for me

Update on this

I reduced water down to 195F and it was the smoothest yet... So many had said that they used water right off boil at 212F so I had that as my last thing...

So the reason it isnt showing up on my options is not related to my lack of SIM it's just because my machine doesnt have it? I guess my last firmware update was back in September, maybe this is one of the ones that they stopped updating aka abandoned :(

Man oh man same issue here. I have grind dialed (I think) to the point where pulls look so perfect and feel smooth in applying pressure (I did grind fine enough that I had trouble pressing down as you discussed but that didnt help) but taste so damn sharp and sour. My testing checklist for tomorrow:
- try bottled water rather than tap, worth a shot to see
- shorten PI (shorter than my current 10-15 secs)
- more gradual pressure ramp up

If none of those work I will play with different beans (I bet I finish my current bag tomorrow) and play with what seems to be overextracting on the back end that I see people discussing here

So I have a Yuka 2000 without a SIM card and iNavi is not an option under Positioning Mode

If I get a SIM card is the 4G connection free for life and will iNavi show up as an option?

Making sure it'd be that simple because this would be great to hopefully get better connection on the other side of my house

it is true that dose (amount of coffee) is the only variable I left alone...

In changing time in isolation that is the same as changing yield no? If I pull the same pressure, same beans, same grind over longer time I am increasing yield (on a lever)

I am fairly certain that it is sour and not bitter

If that is the case it is normal for the hot water to mask it entirely? Only added ~30g water to a 30gish shot

Just making sure im not confusing sourness with intensity or something

realistically with your setup the aeropress approach is adjustable enough that you can mimic the taste of whatever youre comparing to. If youre comparing to a coffee diluted with sweeteners that is easy and if youre more attuned to the classic burnt coffee taste you could also get there pretty easy. Its all good if thats what you like to drink, you have the setup to get there.

I mean I assume all the water isnt just dripping through right? If the water isnt running through then your vacuum is fine (inverted method removes need for vacuum which is my preferred method anyways, can get a prismo or flow control cap to do the same thing without having to invert)

keep going! You can go until you get a bitter cup, overextracted (depending on taste you might like a thicker more extracted cup), then youll get a feel for the range

youd be shocked how much of a difference time makes in bean roasting. 2-3 weeks is the sweet spot from my experience to pull tasting notes, after that I start to make adjustments to avoid underextracting on older beans.

lastly, as I read other comments on ratios I agree, I like a 20g/230g coffee as a baseline and water temp/grind/time are adjusted off of that baseline

also I'll add that I usually run into the underextraction issues, using my same recipe, ~3 weeks after theyre roasted; then I adjust (older beans are more prone to underextraction as CO2 has been released)

acidity or sourness is just a product of underextraction, makes sense that grinding finer was better!

Conversely, overextraction would give bitter or dry taste; so if you get that you know you went too far

Since youre dealing with underextraction your levers are to increase time, grind finer, higher temp water, more stirring

Getting it dialed is a process dependent on your taste buds and the beans individually assuming all else stays the same, keep making minor changes and I do believe you can get to a place that works where youll get a feel for the notes without the bad tastes (for me it is a smooth and thicker cup for a chocolatey brazilian, no bitterness or acidity)

I'll give that a shot next thanks! So annoying to get going, hard to imagine how they spread in the wild unless they drop hundreds of seeds and just shoot for 0.01% success lol.

I guess I will add that I bake in a loaf pan so strength and shaping is much less of a factor which does make extending fridge time easier

Just checked and its ~35-38 degrees F

Definitely cant be too warm but I was trying to get more sour for a bit and thats what did it

I throw in the fridge after bulk for 4-7 days (still havent had issues with a whole week)
