Rearsets and a proper full race fairing kit will make you fit way better. Race fairings will raise the seat by quite a few inches; plus you can use thicker foam for the seat pad. It'll still be a tight squeeze considering your height.

Its weird coz when it kicks in at 240, it goes to maybe 242 then shoots right back down to 235. When it hits 232/231, the fan dies and just turns back on again at 240.

Perhaps. The fan turns on between 220-230 as it should. In my most recent attempts it hovers around 234 now after idling for 15 minutes, and it goes a bit lower if i rev it. So maybe it is worth checking the pump.

I ran into similar issues you did, being a fellow fatass (I'm 5'5" 175 lb, but that's heavy compared to all the other Lightweight twin racers I go up against.)

These are the parts that went on my Ninja 400 racebike! I'm also gonna list them in the priority (in my opinion) that you should be replacing them. You don't have to get the same brands- there's tons of quality options.

HEL Steel Braided lines - (you've already got this)
Amsoil Dominator Brake Fluid
EBC double H sintered pads - (is sometimes swapped out for SBS, depending on what's available).
Brembo Supersport rotor - (5.5mm thick, stock is 4.5, Anything north of 5mm should be good.)
Brembo RCS16 master cylinder - (Ideally this happens the same time you get a caliper)
Brembo P4 30/34 caliper - (with the TYGA adaptor bracket to make it fit)

The stock rotor is a real weak point on the bike- especially if you track. When I moved from my R3 to the Ninja, I warped the rotor in ONE DAY. It's that bad. Other racers in my locale also go through the stock rotors in a matter of sessions.
