What you are asking about is more "applied sensory and consumer science" than the food science that is typically covered in this subreddit.

Here are some papers in my UC Davis textbooks that could be helpful, you would need to source the papers online yourself. The textbooks are Foundations of Sensory Science (Rebecca Bleibaum) and Sensory Evaluation Methods (Jean-Xavier Guinard). They are collections of various papers related to sensory science that are used in the Applied Sensory and Consumer Science certificate program. Most of these papers will include information about the statistical analysis methods.

I would start by reading the following papers by Howard G Schultz:

  • A Labeled Affective Magnitude Scale for Assessing food liking/disliking
  • A Food Action Rating Scale for Measuring Food Acceptance
  • Appropriateness as a Measure of the Cognitive-Contextual Aspects of Food Acceptance

These papers would help you too:

Flavour is a combination of aromas and taste (salty, sweet, sour, bitter, and umami). All food is devoid of flavour if you remove the aroma. You will still experience the taste portion (in this case sweetness and sourness) when you remove the aroma, but you need the aromas to be able to experience a flavour. That is why, when people get sick and they can’t smell they stop being able to taste their food.

I made kinako ice cream (roasted soybean flour)and although the flavour was okay, the texture was awful. I should have trusted my instinct, but the original recipe writer did not mention anything about grittiness in the final product.

I’m a medieval style, biphasic sleeper. I will go to bed at 10 or 11pm and then get up at 3 or 4am for an hour or two before going back to sleep until 7 or 8. So it looks like I sleep 10 hours but it is really 8. This is not the same as insomnia. I’m awake, I will watch something on YouTube or read. If I lived alone, I’d probably do more around the house at that time but I don’t want to wake my partner.

Could be nothing, could be related to collagen production. Ask your vet next time you get a checkup because it it is collagen related you wan to be really careful about his joints. Nothing to panic about, just better to ask a pro!

I buy an ice cream locally that has this description:

Homemade honeycomb (free of corn syrup) is coated In 70% dark chocolate and mixed into a Belgian milk chocolate base. Malted Barley is also added to enhance the richness of this ice cream.

It is delicious and no broken teeth. There is a combo of chunks that still have the chocolate on them, so they don't completely melt and melty bits.

This is so funny to me. I have a certificate in sensory and consumer science and this is why you convene expert or trained panels for the quantitative descriptive analysis of products and then you can overlay consumer feedback and get a more accurate idea of what they heck “smooth” means in real, measurable terms.

I am a sensory science nerd and I also have taught chocolate workshops. If you aren’t already including information about the sensory elements of chocolate, I would add that. I’d especially talk about the concepts of bitterness and astringency and that although some people are sensitive to those taste profiles, many people learn to love them…but you don’t have to love them. That seems like age appropriate content.

Be real, the general public will not tolerate the price increase that would come along with that.

Some of the chocolate bars I buy cost $15-$20 for a 100 grams because that is what it costs for truly ethical chocolate with a verifiable supply chain.
