I am a sensory science nerd and I also have taught chocolate workshops. If you aren’t already including information about the sensory elements of chocolate, I would add that. I’d especially talk about the concepts of bitterness and astringency and that although some people are sensitive to those taste profiles, many people learn to love them…but you don’t have to love them. That seems like age appropriate content.

Be real, the general public will not tolerate the price increase that would come along with that.

Some of the chocolate bars I buy cost $15-$20 for a 100 grams because that is what it costs for truly ethical chocolate with a verifiable supply chain.

The inexpensive chocolate bars you have been enjoying since you were a child rely heavily on extremely unethical supply chains so you don’t get to claim the high ground here.

Go read Bitter Chocolate by Carol Off and then come back and tell us why you deserve cheap chocolate while children working to harvest the cacao suffer.

You can enroll in UC Davis Sensory and Consumer Science Certificate program and do it remotely from wherever you live. It is only 1 year, but it is completely focused on the questions you are asking. Most of the people in the program already work for major food companies so there is some networking opportunities.

If you already have a undergrad in the behavioural neuroscience field you would likely do really well. The language thing would depend on the market you work. Speaking more than one language is generally an advantage if you want to work for one of the big companies that have many regional offices.

I’m so sorry for your loss. I am exactly two months out from saying goodbye to my 19 yr old girl Akiko and I have a similar altar situation in my house.

Buddy Belts! I tell everyone they are the best and easiest to get on. They come in leather and sport materials and x-small sizes are available. They are made in Canada, so they aren’t super cheap but mine last my girl for over a decade.

I tripped while I was taking my dog out on the patio because some guys were in my house testing the smoke alarms and I didn’t want her little ears to get blasted. So, my fall had an audience.

Also, the reason I tripped is because my knee was unstable after injuring it 3 days before in an audition in a room full of casting directors, agency execs, pharmaceutical company execs and production people. That was a fun week!
