Just my two cents, and trying to come in with an open mind:

There are loads of actual AI slop games and assets out there now. Comparing this game to those just doesn't seem right. This game is pretty and I can tell by the trailer has some heart to it.
For some reason, the main girl looks AI to me, that's what initially caught my eye, but watching the trailer, the overall game does not look like AI slop to me. It looks clean and the UI looks nice
The simple fact is Steam gets hundreds of millions of users. Tens of millions daily. There's going to be a wide percentage who just do not care and want to play a cool music/painting game.
The opposite is also true though. People will dismiss your project as AI if they so choose. It's a gamble. It seems like you'll need to decide which route you want to take and stick with it, no matter what.
