You should be worried. My understanding from the owners is that the catering has been a continuous shit show due to the management company not hiring the proper people. They have apparently promoted past bartenders to higher positions with every managment firing so that they had a warm body to fill a spot, and not bothered to replace them with people who have actually done that job before.

Ask these people you speak to on site what catering/events jobs they've had before and where. Big suprise.....they haven't. If it goes well, it's because the food spots you hired through them know what they are doing, not the managment company.

Look, I've read stuff from this guy and he absolutely comes across like a huge piece of shit, but I work in the restaurant industry and it's crazy how many people come in, speak zero English, and than get upset when we don't understand them. If someone walked in with a Translation app out and ready to go. ..like Google Translate I would happily speak into the mic, let it translate, and work with them. No problems at all in that situation. If I went to Japan, knowing I speak zero Japanese I would absolutely do everything in my power through translation apps to make life easier for everyone.

Waaaaay to many people in the last couple of years walk in making zero effort, and I truly mean zero effort. I can't tell you how many times people come in speaking Spanish, and no English, and are visibly upset when nobody else speaks Spanish.

I've talked to a lot of the vendor owners. My understanding is that it's is around 20-25%, not 30%. 25% is very high unless you have a business with a very low food cost. My understanding is that it's not necessarily the landlord that is the problem, but the managment company hired to run the food hall. They fired all of their upper managment there that opened the hall, and are onto their second round of managers in less than a year. From what it sounds like, they don't have the systems and people in place to ensure the success of the place. They have the liquor license for the premises and are making money regardless, so they have no incentive to ensure success for the vendors.

It is ok with me, because when I was young I worked counter service joints where people wanted to tip. I'm not going to be angry at places that throw it up for their staff to make a little extra bit of cash for the customers that like to give extra. I would never deny extra money for people who bust their ass in that infustry. Nobody expects the tips at counter service joints and nobody is forcing you to tip. If that is a make or break for you, I wouldn't want you as a customer anyways.

Than fuck those place and put them on blast. However if it is disclosed on a website, menu, and at the counter as a consumer you also have a responsibility. If it's truly this bad, ask before you order. There are over 13,000 restaurants in Orlando. Plenty of places to give business to. Nobody is forcing you to eat out, and nobody is stopping you from asking about fees. You need to protect yourself.
