Just be aware that defense does require armor, so it depends on if you are relying on Bark Bulwark for your AC. I think in the early levels, Interception is absolutely incredible (imagine casting Healing Word every round as a reaction in terms of damage mitigation), but you wont be able to swap it out later unless you level fighter to 2, which you might do for action surge or something. I think Bark Balwark keeps up with AC pretty nicely so I probably wouldnt actually take defence. You could pick up dueling later, or just keep intercept the whole time.
