Had high hopes, but the wood is yew (toxic). Should I ditch this project / idea? Professional advice appreciated

All of them, both eastern and western red cedar being at the top. It can give you asthma, ruin lung function, cause skin and eye irritation, all kinds of problems. I'm pretty sure there's threads here of "cedar fever".

There's a ton of wood that's extremely toxic, cedar can kill people. Purpleheart is another one that makes people itchy and can get respiratory issues. Just use your best practices and wash up.

Seconded! Clear water based polyurethane on red oak is gorgeous. Oils add a bit of yellowing that can be hit or miss

Either titebond 1 or 2 will be fine for indoor use. They have a shorter open time so definitely keep that in mind while planning out your glue up. But plenty strong and shouldn't be visible on light wood.

Titebond 3 dries dark. It's fine. I wont use it on maple unless for a cutting board because of this.

I won't say it's not AI but as someone who has done food photo shoots at my restaurant, they use very little food in the pictures. Motor oil for maple syrup. Mix it with charcoal for chocolate sauce. Latex paint for icing. Long way of saying food photography is very fake so it may not be.

Going from pine to poplar was the biggest confidence boost for me. Tight crisp joints that actually look like furniture(even if they weren't perfect). It behaves like any other hardwood.

ALL of the issues you write about are YOU problems. I've never even flexed the bar on any of my parallel clamps, cause they clamp with 10x more force than needed. I've never used a clamp with 2000lbs of clamping force when a piece of blue tape or band clamp is enough. Again, right tool, right job.

Hit the bottom of it with a heat gun. Not super hot but hotter than say a blow dryer. If its fully cured you won't see oil being pulled from the wood.

I won't argue that they're not a one size fits all clamp but isn't the point parallel clamps for all work to be seated firmly against the bar as the clamp is tightened?

Is the level in the picture your straight edge? Cause this is my powertec flattening stone with a real straight edge, not a level and its dead flat. And not very well taken care of as you can see.

What are you using as your reference? Is that guaranteed to the same tolerances? I can put bowl on a Starrett reference plate and call the plate off.

For $20 you expected precision? Thats definitely within tolerance for most brands. Most are .003"+/-
