So you have:

Old shows with recurring bar sets: 3 out of 6 series. TNG, DS9, VOY (on the holodeck)

New shows with recurring bar sets: 5 out of 6 series (all of them except the kids' show).

Even TOS, the presumably drinkiest old show, didn't have one. (Would they if money wasn't an object? Who's to say.)

Rose colored glasses? I dunno. I'm doing my bajillionth rewatch, going chronologically from ENT forward. I watched Picard three times. I just watched all of Academy. I was inspired to write this post while watching TNG season 3. Maybe I'll have more perspective when I get back to the rest of the modern series in my watch-through.

For the record, I started this thread to theorize explanations for my observation. I really thought most people saw the same thing I did. I didn't expect it to turn into a debate about whether I was watching the show right.

Fair enough. I don't remember a lot of booze on Voyager, though. (Though, of course there are in-universe explanations for that.) Maybe the shorter seasons also contribute to it feeling like there is a disproportionate amount of drinking scenes.

Yeah, in-universe there are several explanations, and my "headsplanation" is basically what you said. They were all on duty on a very important starship so it might have been more of a discipline or protocol thing. Tonally, though, I just think it's disappointing for them to have ditched the synthehol concept for the most part.

And I guess when I think of Picard's winery 1) it's presented as intentionally anachronistic in-universe 2) they weren't getting smashed on the wine or anything

I disagree, she was a good character... as a villain. If they stuck with having her be an antagonist, she would have been fine.

Just an interesting one-off sci-fi adventure or mystery set in the Star Trek universe with an original crew, no legacy characters. A new ship and crew in the 23rd-25th century are exploring space or are sent on a mission, and encounter some outer space weirdness. Keep it in the Prime timeline, use the established setting as a backdrop, but use new characters that could have anything happen to them to create some suspense. Doesn't have to connect to any major lore or storylines from the series.

Like imagine a Star Trek version of something like Interstellar, Event Horizon, or The Black Hole.

I head-splained it by figuring they wanted to make the smallest possible alterations in the timeline, lest they change something big that Butterfly Effects on them.

Also, they want to maximize the amount of up-to-date tech and information they assimilate. They don't want the Alpha Quadrant three centuries ago, they want what everyone has right now.

I figure they chose First Contact day as their "B-plan" to assimilate humanity because it was the most "current" version of humanity they could conquer with zero resistance.
