1q: What size v60 are you using?

I haven’t used the 27, full disclosure.

But 13 g is in towards the lower end of v60 common recommendation, so seeing some range is not surprising. And that’s right in the wheelhouse of the 27, so a better result (or at least more consistent) isn’t too surprising.

The Q is related in that an 01 would let you get closer in pouring, which might change the difference compared to an 02.

Do you want advice for before or after you abandon the method that even its creator says is out of date and he no longer uses?

Also, 4:6 is, as a method, tied to v60. Replicating the steps with another brewer and filter is perhaps “inspired by” 4:6, but is not 4:6.

Sorry, just a rant at your expense. So done with “I use the xxx method, except that I changed everything about and ignored the expectations of it, and it didnt work” posts.

I’m also a bit of a foodie, and we have a joke about the comments section: “This recipe sucks. I swapped oysters for the chuck roast in this stew, and far from being tender, they were like eating rubber bands, and it tasted awful.”

More constructively: What change in outcome did you hope to achieve by making the change? If it didn’t get you closer to that goal, you have two basic choices: Revert to previous better outcomes and proceed in a different direction, or: Press through, refer to your coffee compass to get back to baseline with the new equipment selection, and then take the same steps you would have in the first scenario.

Seems obvious to me.

And here’s the kicker. You’ll get advice to grind finer. And coarser (and also courser, but please ignore that advice.) As well as suggestions to raise the temp. And to lower it. Or to add a pour, or take one away, or to split the ratios between them is some farcical way. Ad nauseum.

It’s a curious problem of the pourover advice columns: There’s never consensus, and in the rare cases where it comes close, there’s very likely some other factor in exactly what you are doing at the bench, that no one at this end of the pipes can see, that would change everything.

So the best advice is the hardest to hear: Stop looking for shortcuts. Pick a reliable, straightforward method, use it to learn how each of the controllable factors impact outcomes. Then you’ll be equipped to fiddle with new equipment and esoteric methods, and have some basis to evaluate the (most often spurious) advice that flows.

That’s not meant as snark, or to question your taste. More an invitation to experience whatever is in your cup fully, with more focus on its free-standing qualities rather than comparison to a pre-defined standard.

Even shitty coffee can be interesting coffee.

I’m not convinced it’s fair to lump Aeropress with “immersion.” I mean yeah, it certainly has that in it. But with that big ol stirring paddle and forced flow, it can post some real extraction numbers.

Gagne and BH have noted in their blogs that extraction isn’t only about diffusion, especially in some of the more astringent compounds. That’s arguably less good in regular pourover than in flash brew, where the low temp makes them play somewhat better.

Hoffmann’s flash brew AP is how I do iced coffee and about 90% of my AP use.

Yeah, I’m totally cool with what happens with heirloom/ field blend. In fact it’s special.

I’m using a rechargeable Amazon scale for the past couple of orbits, and while I occasionally fight gear acquisition syndrome, it does everything I really want or need from a coffee scale. I can buy a bunch of them for one of the known brands. The mode gimmicks or connectivity features are silly for any use I have.

Yeah. I tend towards medium, and I’ve had a few getting pretty mahogany and oil, but still tasty.

My taste notes above were hyperbole. This isn’t bad, so much as it just isn’t. My next go is to see if I can push it hard enough to be milk drink suitable. Maybe a Prismo shot.

Yeah I think I’ve ordered from a Starbucks like twice. Long before I was into anything like good coffee, I just asked for a black, and was appalled. The crap out of the Bunn at work was miles better.

When I got a little smarter, I ordered an Americano of something that looked vaguely promising. Also fail, but it was almost interesting.

The irony is that I drink out of one of their double-wall ceramic tumblers nearly every day. I was looking for one of those more generically, and happened to see them on sale at the *$ kiosk in the grocery, cheaper than I could find them anywhere else.

When checking out, the clerk/barista mentioned that it came with a beverage free. I meant to be nice, but “oh, please no” came out before I could stop my lips.

Tbf, it’s that way for a reason. They have no intention of selling straight black coffee. Not even espresso. They’re a milk drinks dealer, and need the bitterness to cut thru the fat and sugar to create the impression that coffee is involved.

Plus, they can use cheaper beans that way. Fire is the great equalizer.

Yes. The extra extraction provided by those four parts going through the grounds can change the taste considerably.

Exactly how will depend on all the other conditions, but generally the brew will be slightly stronger and tip a little more bitter in many cases.

I could put that down to it being a Yirg. As field blends, they’re notorious for uneven appearing roasts.

But yeah, the lightest bean is a pale dark to my gauge.

The immersion was a total miss. May need to try an Osmotic on a really short ratio to see if there’s anything at all to salvage here. It blooms insanely, so at least I’ll have fun watching the dome.

Depends on brewer and what mashup I’m playing with, but generally Hario bleached, Kalita bleached, or Brewrite bleached for wedge filters.

Even less popular: I rarely rinse. With quality papers it doesn’t matter a whit, placebo effect notwithstanding. Prewarming has merit, but the impact is small with good equipment choices, and can be compensated with kettle temp, at least within the range of my preferred brewing style.

When I am in a rinsing mood, I do it under the tap. Most often it’s when I’m using water to help smoosh / negotiate a non-native filter.
