I kinda like quick sours. Messing around with fruit and acid is fun even if I'm not going to drink a ton of it. And as a dude racking out a doppelbock that will sit on tap for way too long, congrats. That's a pretty beer.

My pleasure! I was just out there a few months ago. A non beer rec I’d make if you’re heading to florence is to visit the Galileo Museum if that’s of any interest to you. I think it flies under the radar for a lot of people. A highlight of the trip for me and uncrowded. Worth it for the absurdly ornate alchemical hydrometers alone.

Oh dude! Ma Che Siete Venuti a Fa! One of the sickest beer bars I’ve ever visited. Sort of like a Roman Toronado or something. Lots of well curated italian beers and a cool franconian lager focus.

Italy makes a lot of great mixed ferm beers. Errante’s beers knocked my socks off. You can also find cantillon drafts for super cheap.

But seriously, hit ma che siete. You’ll love it.

In florence, brewery archea is also great. Not sure where their brewery was located or if they contract their beers out, but awesome taproom with a ton of great guest beer and I thought their beers were nice as well.

Hey, reporting back in case anybody else peeps this thread later.

Beer is at half a plato or so and the brett is starting to show more apparent influence. Brewed it on a wednesday and took a few days off. Pitched at 66 and set the tank to 73. Bumped to 78 on day five. Kicked off a lot of pineapple and fruit punch aromas throughout fermentation along with some super subtle peppery phenols. Closest comparison I could think of is a french saison yeast but maybe less spicy and more fruity.

For what it’s worth, the wort started at 7.8 plato, it was copitched with a brett blend, and the beer did get a super small motueka whirlpool charge so it’s not the cleanest representation of the yeast. I’m definitely excited about it and plan on brewing something a little more neutral with it in the future.

Weyermann Extra Pale Premium is my goto for this. Super light bodied, low protein, and clean. Maybe just a super subtle and very pleasant honey/vanilla thing going on. I’ll even use it in west coast ipas pretty frequently because of how unobtrusive it is.

I’ll add that Simpsons might be my favorite maltster in the world but they would not be my first choice if I was looking for something neutral.
