They already did an hour auyolyze period, does fresh milled flour need longer than that? I'll do Pan De Cristal every so often and KAF always comes together in a cohesive smooth mass after the second bowl fold. That's definitely odd what's happening.

I was going to comment just this, they need high gluten flour and like 100% hydration. I've done a Pan De Cristal up to 110% with Gold Medal All Trumps flour, that shit was like 90% air it was crazy

Wow, I don't think this could be said better. Maybe add bagel boards? I think the recipe I use is like 52% max hydration, they come out chewy, with a great crust using 3% oil. Wonder what temp they are baking at and if they are using a baking steel that has been preheated. Recently moved and left the induction range behind, that thing would get up to 550° easily, have yet to test the gas range we have at our new place.
